Saffron is the most expensive and valuable spice in the world. Kashmiri variety is known to be the most expensive in the world, sold at Rs 1.3 lakh per kilo. It is recognised by its dark colour which indicates strong flavour and aroma. These flowers are handpicked before sunrise. Each stigma from the saffron flower has to be picked carefully by hand and left to dry away from sunlight. The challenging harvesting process, tiresome labour and the sensitivity of flowers make saffron the most expensive spice.
